Now it's a little bit rotten sewing yeah have you ever taken your toenail and peeled it off and smelled it yeah yes you have yeah yeah it's like that today I'm in Siem Reap Cambodia a place world-famous for the Angkor Wat temple but while a bunch of tourists wait in line under the blistering Sun

     I'm in search of Cambodia's other world-famous attraction the Cambodian cheese Danny a local hotel manager will be my guide today we're heading to a small local market just outside the city to gather ingredients for our Cambodian cheese dish called Rojo but first I spotted some tasty treat this is a Cambodian pizza this is brilliant they took a sandwich and cake and pizza and they put it all into one thing and also an egg Kaneda egg in the morning for breakfast Wow okay we've got the sandwich end and then it's a little bit cakey and it's in the shape of a pizza with a bit of an egg on top because it's a breakfast done it's been and of course it it's sweet mmm that's good no they put some kind of a sweet sauce on the side

      yeah well I was joking when I said part cake but it is actually part cake have you had this one no do you want to try some I just want some this side you don't have to yes Justin it will try a little bit pretty good right all right not bad that's good we've been in this market for about two seconds and already we found this amazing thing let's go see what else they've got I notice there's a scale here is it okay you don't eat too much no why are people weighing themselves at the market

     yes sometimes I just want to know because some people they don't want to get like right right okay they're gonna be skinny Oh call me I want to make it fun I don't know you want to get there I can give you some time yeah this is the market nearest Danny's village and it's a world apart from the high-traffic tourist areas of Siem Reap no tuk tuk drivers offering rides drugs or girls no aggressive flyer wielding masseuses just people minding their own business doing a little grocery shopping and maybe grabbing a snack along the way this is some kind of like a Cambodian cake has it's been around for a long time like when you're a kid did you eat it



      yeah I do okay Wow also also I can maybe that's one you can make this - yeah well you need the special cupcake pan right yeah you have that then yeah I have when I was young and then now I don't know where it is oh okay this is called non-crop and it's made from a batter of rice flour water coconut milk and spring onion try not to burn my face off our taste good it's good but so many different things at one time does this off mm vinegar yeah 


      yeah so it's interesting because it's like vinegar and coconut which you don't usually have together I don't usually I mean I don't usually have it together um and then it's you know very savory and salty too but I really like this one and it's not really crunchy on the outside and soft on the inside yeah funny you get a close-up this looks like something very familiar to me fried food 


     yeah but what are they throwing the Saudis ensuite protocol and then also like them the banana people wonder they're chilling at the market they're doing some shopping yeah some ingredients that they'll stop and get it snack sometimes 


     yeah sometimes the city also is very very angry so they need to Diane is on the way okay just get the food shirt or even angry you know hangry yeah though there's hungry and there's hangry oh but it's hungry hungry is just you want to eat angry is your getting angry because you're angry angry and hungry if you're getting angry because you're hungry yeah this is a good food city yes okay hon you all try some too


      I think if you're trying to get fed this is going to be one of the best one yeah come on come on this race amazing like they do sweet potato fries in the u.s. some places but this is way beyond that that's right baby yeah you know so today we're going to go to your village yeah do your house 


      yeah we're going to make a lunch yeah and you told me that there's some kind of special ingredient right and we're gonna go find that now okay good do these dogs ever try to steal a fish yeah I mean that's what I would get they can buy their hiding disappear as we made our way around the market I came upon a special seasoning I had never tried before what do you call this one so this one we call lies and began but normally in Cambodian be called on Chrome or empty yeah uncle AJ and G yeah oh this is not the end that I use this is my USA but it's so we mix we cook with Pro Hawk yeah we're going to put this in there this one is sour we cannot use it instead of a lamb you can buy it some it yeah of course does this have seasoning in it it looks or is it just in 



     yes I'm and then we pitch to 800 an anti eggs and these are red so are these a fire ants yeah right yeah they won't burn my mouth no fine I don't understand their fire hands you want it all oh my god  I did not expect that so it's a super sour taste yeah it's almost like a cross between like a green apple and the line yeah and Penn sourness and then the texture it's fine it's just like their little hands it's not crunchy or anything it's just their machine but really sour taste but it's amazing so many surprises today 


      I thought I knew what we were up to I had no idea he told me there's something called Cambodian cheese yeah I love you Jesus one of my favorite things I put it on pizza sometimes I will put cheese just on a plate and melt it and eat the cheese yeah it doesn't look like any cheese I've seen besides that ten billion teeth if they make from the street for me so normally they say right it's because sometimes a lot of people they start the chip smell like burnt although this thing like drop entry it's the same smell since it had such a strong smell yeah and some cheese has a strong smell they did odyssic2 yeah oh my god


      oh okay yeah got polish it yeah like yeah she's really big because I don't want to put I don't want to take on to the outside immediate shoulder the dig Alan you know like my aim like a kung fu movie and someone pulls down on someone else that's kind of how she pulled out the cheese sauce on it so normally they get they cut the fish and clean it and then they keep in the inside here okay for one year oh yeah the Sun warrior one beer then one day or one year and a half and then they start is very oh my gosh where you live longer it's good if you keep like not long it's not oh no we don't want any fresh taste at all and after technically and dilation


      oh so yummy so this is the lime leaf yeah lambie's that's why we have to cook with the house strong powders we have to cook with perhaps to make it smell good okay but okay so hold on let me figure out this logic the broth is already aged over one year so that it can smell like really powerful yeah but then you put this to make it smell good



     yeah it really started because people needed a way to preserve the fish and keep the fish and then now when you're cooking it it's like you you like the frog smell and taste but we also want to cover it up a little bit with some citrusy lime leaves yes yeah okay I think I cracked the code I figured it out on next week's episode we go deeper into the cambodian countryside as Danny introduces me to her village before my how is like that okay yeah after that I just take it out


      I think oh I have enough money yeah did you just did you throw a match at it I'll try some seriously strange fruit should I try it yeah is this prejudice kidding it yeah right oh is it clean no that you run your hand on it and finally she cooks up some mean fried Bravo using the punch and fish that's been fermenting for over one year okay here we go how much all to eat it's when you can't even eat it oh um this is my new dog by the way
